Greetings!
Check out these health benefits from eating Celery Root
(Celeriac)…
https://www.dovemed.com/healthy-living/natural-health/7-health-benefits-of-celeriac/
Here’s the easiest recipe for Celeriac (Celery Root)
EVER! π
Baked Celeriac (no cutting involved except getting the
Celery off of the root…unless you want to just pull them off and not use a
knife at all π)…
https://cooking.nytimes.com/recipes/12205-baked-celeriac
I’d check for tenderness and 1 hour, 1 ½ hour and. if need
be. 2 hour mark by taking a metal skewer (Kebabs anyone? π),
or a knife, and seeing how easy it goes thru to test for doneness.
And while we’re at it…you can cook a whole Winter
Squash (like our Acorn Squash for instance π)
without cutting it also!
https://www.wholefoodsmarket.com/recipes/easiest-whole-roasted-winter-squash
A little more ambitious (but not that much)…you can make the
classic French dish Celery Root Remoulade…
https://www.davidlebovitz.com/celery-root-remoulade-celeri-rem/
Minimal knife usage and then shred with a hand grater, food
processor, he’s got the Kitchen Aid attachment, mandolin and anything else you
shred/julienne vegetables with.
Willing to use your knife skills and make Celery Root Fries?
If you have an air frying these will cook in 18 MINUTES!

VERY handy article…
How to shred any vegetable you bring into your kitchen…

FYI – Celery leaves are not so tender because
the Celery hasn’t been blanched (covered in sand so they’re not exposed to the
sun and don’t get as green…less chlorophyll and also less nutritious) so would
use them sparingly in a salad OR would try one of these suggestions…
And the Celery stalks haven’t been blanched so
they’ll have a strong flavor and again, will use sparingly in a salad or will
cook (check out these recipes)…
https://www.epicurious.com/ingredients/celery-recipes-salad-soup-stew-gallery
Can juice the Celery and Celery leaves (or put in a
smoothie) but again, because of the strong flavor would use sparingly!
And an easy Shishito Pepper recipe too
(remember…1 out of every 10 Peppers MIGHT be spicy…or not π)…

some bug spray/stuff for dusk mosquitoes.
Watch the movie trailer (looks like a great documentary
about an organic farm)…
Not organic, but a family farm that has a 3rd
generation family member running it…
Thinking of checking out, and eating at, the Greek Island
Diner (who doesn’t love a good Long Island Greek Diner??? π)
and trying some of the Greek specialties on the menu (always willing to check
out any Spinach Pie and a Greek Salad)…never been here so can’t personally vet
this place, but am going to give it a try…
